Easy Butter Pecan Cake Mix Cookies

Yield: 16 cookies
Equipment: mixing bowl, cookie sheet, parchment paper sheets, cookie scoops
Ingredients:
1 standard butter pecan cake mix (just the dry mix!)
2 eggs, room temperature
1/3 cup oil
1/2 teaspoon salt
Powdered sugar for rolling dough in
Directions:
Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.
In a large bowl, combine the eggs, oil, and salt. Mix well.
Add the dry cake mix and mix until smooth and no clumps remain.
Use a 1-ounce cookie scoop to scoop out cookies.
Roll cookie dough in powdered sugar.
Place 2 inches apart on the prepared cookie sheet. Bake for 7 minutes or until the cookies have puffed up and are set around the edges but still a little undercooked in the middle.
Note: Allow to cool completely before eating!
